Product Description
*The ceramic items in the image are not included.*
■ Organic, Non-standard
This refers to Nanko ume that has been deemed non-standard due to reasons such as spots, dullness, darkening, hard skin, or low fruit flesh. After sun-drying, it is aged for three years. Although the appearance may be inferior, you can enjoy the deep richness and lingering flavor that only time can create.
*Salt content is stronger than regular products (approximately 23%). The appearance and quality may vary more than shown in the images.*
■ Appeal of 3-Year Aging
- The acidity is mellowed, and the umami is concentrated. Ideal for rice, tea snacks, or finishing dishes.
- Aged only with salt, resulting in a rich aroma and a clean aftertaste.
- The fruit flesh is firm, expanding in richness and aroma with each bite.
■ About Fruit Quality, Appearance, and Flavor
Due to long-term aging, some products may have cloudiness from salt or bittern (containing magnesium, calcium, etc.) and pectin (gelatin-like) from the ume on the surface, but this is a characteristic of the product and does not affect consumption.
■ Ingredients / Salt Content
