There are various types, sizes, and shapes. For sharpening knives, use stones with ample size as is for face-grinding. Otherwise, use them for small splitting, like in the technique of Japanese sword sharpening.

It is composed of only the easternmost **First-Class Mineral Deposit** in Kyoto City, Ukyo Ward + comparative samples.

Ume-ga-Hata stones are from Ume-ga-Hata Machi, known for its Nakayama and Kōzan areas, through the Sōban Valley, which is famous as the birthplace of Kyoto sharpening stones, after the King of the Sōban Layer, Okuden Town.

This is not a set of stones that have increased in volume with substandard material, but rather one that allows you to tell the genuine article by the way it breaks. These are stones that have been primarily forged by apprentices under the direction of a veteran with over 15 years of experience in the Yamamoto forging technique. Easy-to-generate, flaky mud slurry like a flat film emerges from the stone with clear leaf structure.

Sharpening grains with directional properties are arranged on the flakes, and surprisingly, the grinding power is strong.

Under conditions of squeezing the water, the grain size also rises as the flakes break.

The slippage between the flakes is due to the lubricating action of the crushed mud slurry of viscous feldspar and mica minerals, giving a light and smooth feel.

If you look at history, they slid heavy Osaka Castle stone walls by laying down wet kombu seaweed. Imagine replacing that kombu with crushed flakes.

If you grind too much pressure with an excess of unfractured flakes, it's easy to finish, but it can create shallow scratches on soft metals due to the overlapping parts of the flakes and the strong grinding power originating from Yamashiro Province.

The appearance of these shallow scratches changes significantly with adjustments in force, sharpening angle, mud slurry amount, and water content, so it's easy to evaluate your skill level through visual inspection. We recommend this.

In the early stages of mastering flake use, you'll likely notice how helpful the "kombu attack" (described earlier) is against under-forged stones and those from other countries that are hard and stiff.

You may find the motivation to challenge those previously abandoned or shelved hard, unruly stones again. In fact, the skilled stone crafter's domain is to extract the leaf structure by discarding the thickness and forging it...

There's a tendency in the market for easy manufacturing with thickness and size as the standard, resulting in a large profit margin, so there's a good chance you'll have the opportunity to use soft red pin mud.
