What is agave syrup?
Agave syrup, also called nectar, is a sweetener produced only from certain species of this plant. What does it taste like? It's three times sweeter than sugar. It has a very delicate flavor, comparable to honey, but much milder.
It is used in the culinary arts as a sugar substitute. How is it made? The syrup-making process begins with squeezing the juice from the agave core. It resembles a pineapple in shape and weighs between 25 and 75 kg.
The juice is then heated and filtered. This hydrolyzes the complex sugars into simple sugars (largely fructose). Heating turns the juice into a liquid with a consistency resembling runny honey. What does agave syrup look like?
Its color ranges from light golden to dark amber. The darker the color, the richer the aroma. It all depends on the degree of heating and filtration. Another production method involves using an enzyme found in a species of mushroom, Aspergillus niger, for hydrolysis.
Agave syrup is produced mainly in Mexico.
What is it used for?
This sweetener is especially appreciated by vegans because it replaces honey. It is an addition to tea, drinks, cocktails. It dissolves easily even in cold drinks. This dark-colored nectar is used in various desserts, as it tastes similar to caramel.
In this form, it can also be used as a topping for pancakes or waffles. It also works well as an addition to seafood. Agave syrup can be heated. Any recipes for sweet baked goods that include honey can be modified.
You don't have to worry that a cake with agave syrup won't turn out well.

Which is better – agave syrup, maple syrup, or honey?

It also has a lower glycemic index than white sugar and maple syrup, so it doesn't cause such large spikes in blood glucose as other sweeteners.
However, it contains significant amounts of fructose, which can be harmful if consumed in excessive amounts. Agave syrup is a good alternative for people who can't imagine life without sugar.
Where can you buy it?
The method of syrup production is important. To ensure it was produced without the use of genetically modified enzymes, it is better to choose a reputable supplier.
How to store it?
Agave syrup should be stored at room temperature. After opening, it is best to refrigerate it. Remember to consume it within 3 months of opening.

The syrup is safe when used in moderation. However, it is not recommended for young children.
