✨ Culinary inspirations ✨

Cream of broccoli soup

Ingredients (for 4 servings):

• 1 large broccoli (approx. 500 g)

• 1 potato

• 1 onion

• 1 clove of garlic

• 1 tablespoon of butter or olive oil

• 1 l of vegetable or chicken stock

• 100 ml of 30% cream (optional)

• salt, pepper to taste

1. Divide the broccoli into florets, peel and dice the potato, chop the onion and garlic.

2. Heat the butter/oil in a pot, fry the onion and garlic.

3. Add the potato and broccoli, pour in the stock. Cook for about 15 minutes, until the vegetables are soft.

4. Blend everything until smooth.

5. Season with salt and pepper, you can add cream at the end for a more delicate flavor.

Serve with croutons or toasted sunflower seeds.

Risotto with Chicken and Vegetables

Ingredients (for 4 servings):

• 1 cup of rice (e.g. Arborio or regular)

• 300 g chicken fillet

• 1 onion

• 1 carrot

• 1 bell pepper

• 2 cups of broth Vegetable/Poultry

• 2 tablespoons olive oil

• Salt, pepper, Herbes de Provence

• Grated cheese (Parmesan or yellow) for sprinkling

1. Dice the chicken, finely dice the onion and vegetables.

2. Heat the olive oil in a pot, fry the chicken and onion.

3. Add the rice and fry briefly.

4. Add the carrots, peppers, spices and pour in the broth.

5. Cook over low heat for about 15–20 minutes, stirring occasionally, until the rice absorbs the liquid.

6. Sprinkle with grated cheese and serve immediately.
