Cinnamon, or the bark of the Ceylon cinnamon tree (Cinnamonum cassia), which originally occurred only in East and Northeast Asia. For centuries, it has been one of the foundations of natural medicine. Cinnamon and its warming properties were mentioned in a Chinese herbal book as early as 2700 BC.

Ground cinnamon has a sweet and spicy, slightly burning taste and a characteristic, intense smell and rusty color.
