How to store olive oil?
Once opened, olive oil is good for consumption for 8-10 months. It's best to store it in a dry, sun-drenched place, but not in the refrigerator, as it's sensitive to sudden temperature changes. Refrigeration can cloud the oil, but this is a natural and reversible process.
Its flavor should be distinct, slightly spicy, and slightly bitter – thanks to the presence of valuable polyphenols – a sign that the oil is fresh. According to your preferences and as an experiment, it's worth adding herbs and spices to the bottle, such as garlic, rosemary, basil, chili peppers, or sun-dried tomatoes.
