Akai Kitsune uses different flavors for each of the four regions. The udon for the Kansai region is made with Urume sardines, which are commonly used for udon and oden soup stock in the Kansai region. Have you ever found a black band around the inside of your cup after drinking down the sauce? That is a sign that there is plenty of dashi in the soup. Please take a sip to taste our commitment to dashi.
