Soba with Duck Dashi Soup
Soba noodles with a smooth texture and a rich, elegant broth with the flavor of duck broth, soy sauce, and sweetness. The rich aroma of the liquid broth makes it a perfect accompaniment to soba noodles.
Navy Blue Kitsune Soba
Smooth, chewy, dark colored buckwheat noodles with a nice wave that easily entwines with the dipping sauce. The sauce is a combination of bonito broth, kelp broth, dark soy sauce, and sugar. The ingredients are sweetly seasoned fried bean curd, pork, and green onions.
Green Tanuki Tempura Soba
Green Tanuki has different tastes for each of the four regions. For the Kansai region, we use Kansai style dipping sauce with bonito flakes, Soda bonito flakes, kelp, and dried sardines. The noodles are finished so that they can be well mixed with the sauce, and the special topping "koebiten" (small shrimp tempura) is made with the optimum combination to bring out the aroma and flavor of the onions. The flavor is enhanced as the sauce soaks into the noodles. The soup is a cup of noodles, but you can still taste the original flavor of the dashi.
