Ukai Senbei has been made for over 60 years since Nagaraen was founded in 1953 (Showa 28). It's a castella cake with a gentle, nostalgic, and simple flavor. Because it's such a simple treat, we're extremely particular about the ingredients. We use Gifu Prefecture's "momiji eggs," laid by precious, purely domestic chickens, and Gifu Prefecture wheat flour, nurtured in the pure waters and air of the Nobi Plain.
