Directions: Brine Mix - In a medium saucepan, combine 2 cups of water and the brine mix* and bring to a boil for 5 minutes. Remove from heat, add 2 gallons of cold water, and refrigerate until completely cool. Place chicken breast-side down in the brine bag** and place in a roasting pan. Pour the cooled brine mix over the chicken. If necessary, pour cold water over the chicken until it is completely submerged and seal the bag tightly. Refrigerate for 2 to 4 hours. (Soak up to 8 lbs. of chicken in pieces or halves for 2 hours.) Seasoning: Remove the chicken from the bag. Rinse thoroughly inside and out, then pat dry. Brush the chicken with oil and generously drizzle the Bulgogi House Rub over it, ensuring it is evenly coated and covering the outer skin. Roasting: Preheat the oven to 350ºF. Place the chicken in a roasting pan and cook until the internal temperature of the thighs reaches 165ºF, approximately 20 to 25 minutes per pound. Remove the chicken from the oven and let it sit for 10 minutes to allow the juices to permeate the meat. Shred, serve, and enjoy. For grilling: Use indirect heat with charcoal or a burner on one side and a drip tray underneath the chicken. *For chickens over 5 lbs, use the entire pouch with the brine mixture. For chickens under 5 lbs, use half the amount of brine mixture and water indicated in each step. **Do not use the brine bag in the oven!
