Instructions for Use
Add 200cc of hot water (approx. 40°C) to one packet of this product and wait 30 minutes to an hour (to return it to its raw koji state) before using.
Homemade Miso Recipe
Ingredients: One packet of this product, 300g of soybeans, 150g-200g of salt
Directions
1. Soak the soybeans in water for approximately 8 hours, then simmer in clean water until soft. (Use plenty of broth.)
2. Drain the boiled soybeans in a colander and let the cooking liquid cool until it reaches about 40°C.
3. Add this product, the soybeans from step 2, salt, and approximately 300cc of cooking liquid, and mix while mashing the soybeans. (Adjust the firmness depending on the amount of cooking liquid.)
4. Pack the contents tightly into a container, sprinkle a light layer of salt on the surface, cover with plastic wrap, and store.

<How to Make Brown Rice Amazake> Ingredients: ○ 300g Brown Rice Koji, ○ 375g Rice, ○ 450cc Water / (1) Grind the brown rice koji in a blender in about three batches. / (2) Place the rice and water in a pot, cover, and bring to a boil. Once boiling, open the lid and cook over medium heat for 3 minutes, stirring constantly. / (3) Set the rice cooker to a low, keep-warm setting (around 60°C) and allow (1) to cool to 60°C. (4) Transfer (1) to a jar after cooling to 60°C. Add the brown rice koji in three batches and stir. (5) Close the lid and keep warm for 6 hours (low heat setting of approximately 60°C), stirring once every hour. (6) Once ready, transfer to a storage container, let cool, and store in the refrigerator. *The final taste will vary depending on the rice used. Adjust the sweetness of the finished amazake by adding small amounts of water.
