Masahiro MV-H Paring with a blade length of 90mm is a knife designed for peeling and processing small products such as fruits and vegetables. The shape resembles a miniature chef's knife and the pointed tip allows for easy maneuvering. Indispensable in every kitchen.
The MV-H series has been designed and made for European and American customers who use knives in a slightly different way than in Japan. In addition to cutting, knives in the west are also used for chopping. Considering the use of this technique as well, the blades of the MV-H series knives are slightly thicker, more durable for heavier work.
Knives from this line are made of a derivative of VG-10, a molybdenum-vanadium, high-carbon, stainless steel called MBS-26, which has undergone a three-stage hardening process until reaching a hardness of 58-59 HRC. Each blade has been honed to perfection by artisans with over 30 years of experience, taking Masahiro knives to a level of unparalleled sharpness.
The hygienic handle with antibacterial properties is made of a material called polyacetal (POM), characterized by exceptional durability. The handle was secured with three perfectly placed rivets, and an additional metal reinforcement was used between it and the blade.
Knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the cutting edge is shifted to one side in the axis of the knife. The benefits of using asymmetric sharpening are up to 35% thinner cutting edge compared to the symmetrical blade, which makes it much sharper.

All Masahiro knives are extremely sharp, so we recommend that you handle them with care.
Masahiro knives should not be used to cut frozen food ( except for the series intended for it).
Do not use knives for anything other than food.
Use wooden or plastic chopping boards for cutting.
Do not wash the knives in the dishwasher, which will damage the cutting edge.
Wash the knife in warm water with dishwashing liquid.
Wipe the knife dry after washing.
